Eating in Udine

Udine is the centre of Friuli, and Friulian cooking is cheese, pork and polenta — with a filled pasta that tastes of dessert.

The dishes

  • Frico — Montasio cheese cooked in a pan until it becomes a crisp cake, alone or with potato and onion. Eaten with polenta;
  • Cjarsons — ravioli from the Carnia, filled with herbs, raisins, cinnamon and sometimes chocolate: sweet and savoury at once, dressed with melted butter and smoked ricotta;
  • Musetto e brovada — cotechino with turnips macerated in grape marc, a winter dish;
  • Toc' in braide, soft polenta with cheese.

The sweets and the glass

Gubana from the Natisone valleys, rolled with walnuts and grappa. The wines are Colli Orientali del Friuli and Friuli Grave, with Friulano and Picolit among the whites.
